In september 92, when I arrived in Japan, I worked in a japanese restaurant. It has been a very good experience (a bit more than 2 years). I gained some knowledge of Japanese cuisine and a little base of the Japanese language. But as I was doing so, I had a dream:
why not teaching occidental cuisine in english!!!
So this is what I have been doing, since February 95. First, not on a full time schedule but with time I could stop teaching english and concentrate on my cooking activities.
I developed a menu: until now, about 250 recipes from different countries around the world excluding Japan, China and Korea. Mostly, they are not too difficult to do.
I had to consider the ingredients problem. Some of the imported ingredients are quite difficult to obtain (we live far from the main centers) so I had to restrain my choices.
Cooking for and with Japanese house-wifes required me to adjust my doing. These adjustments are simple concessions in regards with Japanese taste: cutting down on sugar in desserts, adding some sugar in main dishes or reducing the vinegar quantities, I also had to go easy on the herbs/spice quantities (some have scary tastes for Japanese people).... Servings must also be re-considered (small individual portions are more likely to be appreciated).
I am including, in this Home Page, some of my choices.This list includes the recipes I have experienced with my students and for which I have a Japanese translation, they are in English/Japanese.
Some of them will be presented in this Page on an other bilingual base (English-French). As for the others, they will eventualy be added or if you are interested, just write me a note in my Mail Box and I will send them to you.
